Pro Cheff Double-sided Cast Iron Plate: The Ultimate Addition to your Brick Oven

The two sides of the plate

  • The Grill Side (Ribbed): Perfect for searing meat, fish or vegetables. The ridges create the classic grill stripes and lift the product above the fat, which is ideal for an authentic BBQ taste indoors.

  • The Pancake Side (Flat): This side is multifunctional. Besides pancakes and the aforementioned Lahmacun, this is the ideal side for:

    • Smashed burgers: The flat plate ensures maximum contact and a perfect crust.

    • Tortillas and flatbreads: The constant high heat creates those beautiful brown 'air cushions' in the dough.

    • Crepes: Due to the even heat distribution, the batter cooks equally fast everywhere.

Why cast iron at 400°C?

At such high temperatures, cast iron is superior to other materials. It does not warp and retains heat extremely well. When you put a cold steak or a slab of dough on the plate, the temperature of the plate barely drops, which is essential for crispy results without drying out the product.

Maintenance tips for Pro Cheff Cast Iron

Cast iron lasts for generations, provided you treat it well:

  1. Pre-seasoning (Seasoning): If the plate is not already 'pre-seasoned', rub it with a thin layer of vegetable oil and let it get well hot in the oven until it stops smoking. This creates a natural non-stick coating.

  2. No soap: Preferably clean the plate after use with just hot water and a brush. Stubborn residue? Use some coarse salt as an abrasive.

  3. Dry storage: Dry the plate immediately after washing and rub it with a drop of oil to prevent rusting.

Note: Always use heat-resistant gloves at these temperatures. A 28 cm plate coming out of a 400°C oven will remain extremely hot for a very long time.
